Sunday dinner brought this hearty bowl of BUTTERNUT SQUASH, MUSHROOM & GOAT CHEESE RAVIOLI w/ Garlicky Spinach + Chili Olive Oil! 🌶🍝🍃grab the deets below 👇🏼👇🏼#vegetarianfood #pastalove . Picked up a pack of this all-natural/no preservative ravioli @wholefoodsont and dropped it into boiling water for 7-8 minutes. Brought a saucepan to medium heat and added the chili olive oil and the cooked ravioli. In a salad bowl, toss 2 cups of organic baby spinach with 1-2 tbsp of extra virgin olive oil, 1/4 tsp of sea salt, and 2-3 finely minced garlic cloves. When well mixed, throw on top of the ravioli and sauté everything together. Throw a handful of crumbled feta, sprinkle some chili oil and transfer to individual bowls. It’s #toasttuesday ! I’m celebrating with some sweet potato toasts, topped with the classic PB & Banana sprinkled with cacao nibs + the other one with PB, @alpro coyo & blueberry compote 🍠💜 . . I never liked sweet potato toast before and never made it since idk why... maybe I made it wrong last time? But anyway... THIS TIME, I’m obsessed oh my, I’m in love. I think the trick is to just leave the SP slices to cook without turning them over so the top side is super crispy. I will definitely be making SP toast more often now! 🤤 I’m trying to avoid bread because bread seems to really trigger my digestive issues... but sweet potato toasts is still a healthy option too, they’re so satisfying & loaded with so many amazing vitamins! . ________________ To make: You will need 1 medium/large sweet potato sliced into 1” thick slices lengthways. ________________ 1️⃣ preheat oven to 200C/180 fan/400F/gas 6 then line a baking tray with non stick baking parchment. 2️⃣ Place your sweet potato slices onto the baking tray and bake in the oven for about 30-40 minutes until the tops are crisp and they’re soft in the middle and caramelised 😋 3️⃣ Serve your SP toasts with your favourite toppings! Today’s meals: Breakfast was my usual jar of overnight oats with aronia berries and walnuts. ⠀ ⠀ Lunch was a salad (spinach, kale, mushrooms, mini sweet pepper, broccoli slaw, cucumber, radishes, parsley and a generous squeeze of lemon) and a bowl of leftover chili. ⠀ Dinner was this bowl of quick chicken soup. I usually make it completely from scratch with a whole chicken, but this is my 30 minute version! I browned a pound of chicken breasts in the instant pot, then cooked under high pressure for 15 minutes. I boiled the Reames frozen egg noodles separately while that was cooking. I also chopped the onion, garlic, carrots and celery and lightly sautéed those before adding a quart of chicken stock, a bay leaf, half a lemon and a 2 inch chunk of ginger. Once the chicken was done, I shredded and added it, the broth it cooked in and the noodles into the pot of soup. Began intermittent fasting yesterday and my plan is to do it for a full month. So far it’s actually a piece of CAKE! 🍰 I hit the gym before work and get a bunch done when I get in so I never even think about food until 9:30, at which time I have a cup of warm water mixed with ACV, cayenne, and cinnamon. After another hour I have a cup of green tea and that holds me over until 12pm when I have my first meal. Today, after my first meal I went to the gym again and was SO energized! Came back and had a snack, then had my lunch around 3pm. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I’m doing an eating period of 12pm-8pm, but I generally eat dinner around 6:30pm so that’ll be my last meal each day. If you’ve been following my stories you know that today I went to the gym. May not seem like a big deal but I suck at sticking to an exercise regime and so I’m trying again for what feels like the 100th time. Tbh my favorite part about the gym is rolling it out on the foam rollers and getting a good schvitz in the sauna after it’s all said and done... . Happy Tuesday friends! I took advantage of the warm weather this afternoon and went for my run later than usual. Sometimes I don’t really have an appetite for a few hours after I run it I know I need to refuel. Made this simple citrus and dill salmon with garlic pepper roasted broccoli. All one sheet pan for the win! Salmon filet 2 tbs of orange juice 1 tbs lemon juice 1 tbs lime juice 1/2 tsp maple syrup 1 tsp of dill. Whisk together and let the salmon sit in the marinade while you prep the broccoli (or longer if you want). Place broccoli and salmon on a sheet pan. Considering changing my screen name to @TheSandwichDietitian. Thoughts? JK, but I do love sandys. It’s a complete meal (carbs, protein, fat) all packaged in one easy to eat vessel. This sandy is an egg salad sandy. I mixed 2 hard boiled eggs (hello protein and choline- see post a few back to learn more about the importance of choline) with pickles and jalapeños. Used half @durkeesltd Famous Sauce and half mayo (I typically use Greek yogurt but didn’t have any) for the base. Sandwiched between two pieces of toasted @daveskillerbread Sprouted Whole Grain bread and spinach. Paired this with a salad for a filling and delish lunch! I remember when I used to never order sandwiches out of fear they were too “high in carbs” or too “high in calories”. Whew am I glad those days are over! I eat sandwiches multiple times a week and, surprise surprise, they haven’t made me gain any weight (with the exception of pregnancy lol) like all those carb haters told me it would! I call this one “Kyle figures out how to make jammy eggs like all of the other food accounts” ••• +preheat your oven to 400° chop up your desired amount of cauliflower (I used 205 g for just me, a whole head will probably get you 4 servings) +coat in olive oil, salt, and pepper +bring a small pot of water to boil +disperse your cauli onto a baking sheet, roast ~15 minutes +MEANWHILE, cook 1/4 C rice (or more, depending on how many you’re serving) +also plop an egg (or more... get my drift?) into that boiling water for SEVEN MINUTES- then remove and cool in COLD water +ALSO (last also, promise) chop up 1/4 of a medium onion, and a head of baby bok choy +toss them thangs in oil & ground ginger +is your egg cool? 🥦Vegan pasta bake🥦 I made this following a recipe on the new @deliciouslyella app - it’s such a good app I really can’t recommend it enough! You get about 400 recipes plus 40 yoga videos and it’s 99p a month after a 1 week trial - I really think it’s good value when you compare the cost of recipe books (not an #ad!) I adapted the recipe which used cauliflower and swapped it out for broccoli and it was soooo good! Just roasted broccoli and mushrooms and cooked some pasta while making a white sauce from a little olive oil, 50g gram flour and 500ml almond milk added slowly. It made a lovely creamy sauce which you add a tbsp of tahini and nutritional yeast to. Combine the veg once roasted with the cooked pasta and white sauce, add a handful of kale, top with breadcrumbs (I also added thyme) and bake at 200c for ten mins. Served with salad! I mashed Edie’s up a bit and she loved it!

You see, this sandwich was something I invented when I was trying to lose weight after college, but wanted something ridiculous and delicious and cheesy all at the same time. And you know what? 🍌 BANANA SPICED OAT PANCAKES🍌 loving @6thshare page that it inspired me to doodle on my pictures also 😅 but no lie, these pancakes were amazing, if you haven't tried this out yet, drop what you're doing and go make yourself a batch. Recipe will be down below! I've been feeling very positive, productive and energetic lately which I'm very proud of myself for. Maybe because it's the warm weather we're getting in Toronto or its that I'm starting to let go and grow for myself but all in all, I'm hoping that this feeling continues 😊 remember to take care of both your mental and physical health my loves 🥰 . INGREDIENTS: - 1 banana, mashed - 1/2 cup of oats - 1 egg - 1 TBSP of chia seeds (I didn't really measure mine) - 1 TBSP of flax seed (didn't really measure this also) - splash of milk (more if it's too thick) - baking soda - baking powder - a spoonful of vanilla yogurt - 1 TSP of nutmeg - 1 TSP of ginger, grounded - 1 TSP of cinnamon STEPS: combine everything into a blender and blend until smooth. Transfer into a bowl and let the batter sit for 15-20 mins so it can thicken up. Heat up a pan and pour the mixture to mix pancakes and cook until golden brown on both side and then add your toppings! It's the middle of the week...how is it going for you? It's oat bran kinda morning for me with antioxidant yummy fruits. . . Since I have discovered oat bran few years ago, I hardly eat the common rolled oats. It's also because oat bran is very simple to make and my lil man likes it too. Oat bran is the outer shell of the seeds while rolled oats is the entire squashed groat. Nutrition wise, a cup of oat bran has lesser calories, more protein and fiber compared to a half cup of rolled oats. A cup is way too much. What you see in this bowl is about 1/4 cup of oat bran. Oat bran itself is not as tasty as rolled oats...which is why I flavour my bowl with cocoa, fruits and nuts. 😊 . .
