Miyoko’s vegan cheese is a solid bougie cheese. It’s on the pricy side so it’s not an everyday thing. But when you’re binge watching trashy reality TV and don’t feel like making dinner, this is an adequate substitute.

threw this bowl together after spin with random yummy things in the fridge β˜€οΈ tried the organic @wholefoods chickpea shells for the first time and i dig - the shape worked well with my @gothamgreens vegan pesto 🌱 (seriously the BEST if you don’t make your own at home) I also added portobello mushrooms, organic cherry tomatoes, white onion, and asparagus for some veg. I thought that going vegan was going to be super expensive/hard to plan meals for but I’ve learned to keep my fridge stocked with lots of veggies + plant-based proteins which has helped A LOT. Almost a month down and I’m feeling gooood ❀️

Savory chickpea pancake with avocado mash & quinoa πŸ’š

β€’ Chickpea pancake: 2 tbsp of chickpea flour + 2-3 tbsp of water + salt
β€’ 1 cup of fresh spinach
β€’ Cooked quinoa
β€’ Avocado mash: 1 avocado + 1 red pepper + cilantro + juice of 1/2 lemon + salt + cayenne pepper

* Chickpea pancake πŸ₯ž
1. On a pan add a tsp of olive oil and spread it, then heat it on medium heat.
2. Mix the chickpea flour, water and salt and whisk until well combined.
3. Pour the mixture into the pan and cover until it forms a firm pancake.
4. SautΓ© the spinach for a few minutes with some garlic and stuff the pancake with it. I cut the pancake in half to make it easier, but you can fold it without breaking it.
5. Serve with a side of quinoa and the avocado mash.
6. Enjoy πŸ˜‹!
