Did you know cooking water of chickpeas (aka aquafaba) has almost the same chemical properties as egg whites, hence why it is a perfect replacement to the animal based protein! 
Until the end of September, the #AnatomyOfAction Challenge invites you to involve in one or many action from 5 lifestyle categories (food, move, fun, money, stuff). As a proud ambassador of this challenge, I chose to show you how we can be more conscious about the value of the food we often discard (I mean, value of chickpea water being Chocolate Mousse, how better can it get?). I commit to not waste any part of my food during the challenge! 
What about you?

RECIPE for a decadent mousse you won’t resist! 🌱 (makes about 4)
Ingredients:
- 130g (1/2cup) aquafaba : water from a normal sized can of cooked chickpeas, preferably salt free. - 100g dark 70% chocolate
- 1 heaped teaspoon almond butter
- 2 teaspoons coconut sugar (optional, would recommend if your chocolate has under 30g sugar/100g)
- extra chocolate (2squares)
- top: more choc, fruits..
Method: 
1. Beat the aquafaba for around 5minutes till it’s a firm airy texture - tilt your bowl upside down it should hold itself. 
2. Melt the chocolate in a double boiler, allow to cool to room temperature and add almond butter.
3. Slowly incorporate the chocolate to the ‘eggs’, carefully without breaking them (see video)
4. Add sugar if needed and shaved chocolate. 
5. Place in ramequins and cool 2-3hours in the fridge, top with fruits!!! Hope you enjoy! Please tag me @amelietahiti if you recreate this so I can see your beautiful mousse!

Recipe: (yields 3-4 servings)⁣
Ingredients:⁣
🍃Kombu dashi⁣
~ 8 caps of shiitake mushrooms⁣
~ 2oz* dried kombu, clean with a slightly damp towel⁣
✔️In a pot with 8-10 cups of water, place both ingredients in & turn on the heat. Right before it comes to a hard boil (a crucial step to prevent the stock from turning slimy), turn off heat & drain stock to a bowl, set aside. Save leftover in a jar, if needed. *I love kombu, so I used the whole pack.⁣😅
⁣
🍃Ramen broth (may prep ahead of time without milk, inspired by justonecookbook.com)⁣
~ 6-8 stalks chopped scallions, white & green parts separated ⁣
~ 1.5 tablespoons grated ginger⁣
~ 1 tablespoon finely minced garlic⁣
~ 4 tablespoons ground sesame seeds (used a small pestle & mortar)⁣
~ 1 tablespoon *hot bean sauce/paste 'doubanjiang'⁣
~ 1 tablespoon white miso paste⁣
~ 4 cups of ginger miso broth (used @traderjoes brand or replace with more kombu stock)⁣
~ 4 cups kombu stock⁣
~ 1-2 cups of unsweetened plant based milk (used cashew)⁣
~ toasted sesame oil (used Kadoya brand)⁣
⁣
✔️In a heated pan with 3 tablespoons sesame oil, sauté white part of scallions, garlic & ginger until fragrant. Add miso broth, kombu stock, miso paste, hot bean sauce, ground sesame seeds & let simmer for 5-10 mins. Blend mixture (optional). Season accordingly with miso/bean sauce. Then add in milk, stir until well combined & turn the heat off.

🍃Other ingredients⁣
~ Noodles of your choice (used sunnoodles brand) - cooked based on package instructions⁣
~ 1 pack firm tofu, drained & cut into cubes. Then, dip tofu cubes in cornstarch & fried, season with salt⁣
~ sautéd mushrooms from kombu stock (no waste food😁) & chopped scallions (green part)⁣ & sesame seeds
⁣
Serve warm, enjoy!🤩
*use non spicy bean sauce/paste for no heat.⁣

—•—Ingredients—•—
2 cups spelt flour
1/2 cup brown sugar
1/3 cup cacao powder
1.5 Tbsp espresso powder (or 1 tsp cinnamon)
1 Tbsp baking powder
1 tsp baking soda
0.7oz (20g) dark chocolate, chopped
1 cup zucchini, finely shredded
1 cup vegan yogurt
1/2 cup vegetable oil
1 Tbsp apple cider vinegar

Coating:
3.5oz (100g) dark chocolate
—•—Method—•—
1. Place the 7 dry ingredients in a mixing bowl and combine. Place the wet ingredients in a separate bowl and whisk together. Combine wet with dry ingredients with a spatula until you have a smooth mixture (don’t over mix).
2. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
3. Scoop the batter into the pan and carefully even out with a spoon.
4. Place in the oven for 50-55 minutes until a toothpick inserted comes out clean.
5. Place on a cooling rack and let cool down completely.
6. Melt your chocolate over a water bath and spread over the cake, let cool down completely until the chocolate is firm before slicing.

RECIPE
For the pink rice:
250g sushi rice
3 Tbsp rice vinegar
1 Tbsp maple syrup
1 tsp salt
1 tsp pink pitaya powder
.
For the filling:
2 Tbsp soy sauce
1 Tbsp sesame oil
1 Tbsp mirin
1 tsp garlic powder
300g oyster mushrooms, chopped
1 carrot, julienned
1 cucumber julienned
1 avocado, sliced
purple cabbage, sliced

6 nori sheets
black sesame seeds
.
METHOD
1.Prepare the sushi rice according to instructions on the package.
2.Add the rice vinegar, maple syrup, salt and pitaya powder and combine well. Set aside and let cool down.
3.For the oyster mushroom filling, place all marinade ingredients into a bowl and whisk together. Add in the oyster mushrooms and use your hands to coat them evenly in the marinade.
4.Heat a sauce pan over medium heat and add the mushrooms. Fry the mushrooms for 5-8 minutes until they become dark brown and chewy.
5.Prepare the veggies as instructed.
6.Take out a nori sheet place it on a bamboo mat, place 3-5 tbsp of rice (depending on desired thickness) on the sheet and use your hands or a rice spatular to evenly press it down (see video for instructions). Place the fillings inside and carefully start rolling your maki rolls (for detailed instructions watch YT video on how to roll sushi).
7.Repeat this step until all your ingredients are gone. Use a sharp knife to cut the maki roll into pieces and serve on a platter with soy sauce!

• 1 medium onion, chopped⠀
• 1 medium green pepper, chopped into small pieces⠀
• 4 cloves of garlic, pressed (or finely minced)⠀
• 3 cups of vegetable broth⠀

• 15 ounce can of diced tomatoes⠀

If you’re ever at Olive Garden and distraught because you have no idea what to eat, this meal will make you a very happy vegan. The soup is bottomless and breadsticks are free so you’ll end up paying next to nothing for a well balanced, delicious meal. Just make sure you’re dipping the breadsticks in the minestrone soup for full effect. 🤓

Lunch: Veggie pulp soup
Chickpea potato soup made with juice pulp. 
INGREDIENTS
2 Tbsp coconut oil
2 cloves garlic 
1 onion 
1 Tbsp turmeric powder 
1 Tbsp paprika powder
pinch red pepper flakes
1 russet potatoe
2 cups  chickpeas 
4 cups water 
Thyme
Juice pulp + 1 Avocado 🥑 
In a large slow cooker, combine coconut oil, onion, garlic, thyme, veggie pulp, cooked chickpea, and potato. Pour in water and season with Himalayan salt, pepper,cayenne and paprika and red pepper flakes. 
Cover and cook on low for 2-4 hours on medium. Stir in  parsley and turmeric before serving.

the beauty of simplicity:

almost always when talking about vegan food, two ideas are generated: a basic salad or a hyper sophisticated recipe.  Here I bring you the intermediate point: tomato, olive oil, garlic and basil.  Pasta are bought, unfortunately today I did not have time to knead.  For the sauce: cook the tomatoes in hot oil.  A little trick: if you do not move them, they will caramelize thus generating a unique sweet taste.  Then add the garlic and continue cooking.  If you want, you can process it.  When everything is in the desired texture, correct salt and pepper.  Add basil when finished.

I've definitely been inspired by the bakers and  made these muffins at the weekend. So these are a perfect to-go breakfast or morning/afternoon snack. And with only 2tbsp of sugar per 12 they're even perfect for a little one!👌 Ingredient 
100 grams flour 
100ml milk of choice 
Half a teaspoon cinnamon
1 teaspoon baking powder
I apple finely chopped 🍎🍏
50g butter +10 gram 
2 eggs or flax eggs for vegan🥚🥚
50g ground almond +20g 🌰
1 tablespoon brown sugar + 1 tablespoon 
Method 
Mix all the dry ingredients together. In a seperare bowl mix the wet ingredients. Stir the wet into the dry. Add the copped apple but save a little for the topping. 
Mix the extra butter with the extra ground almonds and sugar. You want a crumble texture. 
Pour the muffin mixture into a muffin tin (12) and sprinkle the crumble mixture and the left over apple on top. 🍏

🌟Mint Chocolate Chip Smoothie with Chia Pudding🌟 {recipe below, GF vegan}💚It’s spring down here so my garden is starting to explode with life & colour, especially the mint plants that crowd around our front steps. So I made an old favourite: a mint choc chip smoothie, where the green colour comes from a heap of spinach & fresh mint, the creaminess comes from frozen banana & coconut milk, & a handful of dairy free choc chips give that cacao crunch. I’ve been admiring spring blossomS all over the neighbourhood so I collected a few windfall blooms on my morning walk before the rain pummelled them. Oh, and those are black grapes! 🌸🌸🌸Recipes:
Mint Choc Chip Smoothie
1 frozen banana
1 tightly packed cup of chopped fresh spinach
1 - 2 tightly packed Tbsp chopped fresh mint
1 Tbsp choc chips
1 tsp pure vanilla
¾ cup rice milk
¼ cup coconut milk
handful of raw cashew pieces (optional)
Blitz until smooth, adding the choc chips near the end of the blend, if you prefer a few chunks. 
Chia Pudding:
½ cup chia seeds
¾ cup coconut milk
¾ cup rice or almond milk (or milk of your choice)
2 Tbsp pure maple syrup 
1 tsp pure vanilla essence 
Add all ingredients to a jar or container, and stir stir stir. I use a small whisk to ensure no seeds clump together, creating a thick, goopy, soft pud. Pop into the fridge to set.
To create the diagonal effect, I poured the smoothie into the glass at an angle, put it into the freezer until just set, then scooped the chia pudding on top. Ingredients
1 T oil
1 pint sliced cherry tomatoes
3 tsp chili powder
5 tsp curry powder
3.5 tsp cumin
2 tsp onion powder
3 garlic cloves minced
1/2 tsp pepper
1 tsp salt
1 can chickpeas rinsed and drained
3/4 cup cooked corn
1 can coconut milk
1.5 cups packed spinach
Cilantro and red chili flakes for garnish

Method
Over medium heat, heat oil. Once hot, add tomatoes and spices, and cook for 3 minutes, stirring. Add garlic and cook another minute. Add remaining ingredients except the spinach and garnish. Stir to combine and cook at a low simmer for about 10 minutes uncovered, stirring occasionally. Cook longer for a deeper flavor, but you don't need to. Add spinach and cover, cook until spinach wilts, about 3 min. garnish

Pumpkin is so great you can even eat it sweet 😋
If you never tried I highly recommend trying the purée recipe! You don’t have to use it in oats, you can also add it to muesli, on top of your smoothie bowl, paired with fruit, as a side for your pancakes, as a add on to your joghurt or just eat it with a spoon (it’s actually that good 😁) 1️⃣ cook your pumpkin (I used butternut and removed the skin. You could also use Hokkaido w the skin) in water w star anise, cardamom and cloves (for a small pumpkin you need around 1 star anise, 3 cardamoms and 4 cloves)
You need those spices in there, that’s what makes it taste so good! 
2️⃣ when pumpkin is soft, remove the spices 
3️⃣ Blend the pumpkin w a little bit of vanilla oat/soy milk and cinnamon

Pumpkin is so great you can even eat it sweet 😋 If you never tried I highly recommend trying the purée recipe! You don’t have to use it in oats, you can also add it to muesli, on top of your smoothie bowl, paired with fruit, as a side for your pancakes, as a add on to your joghurt or just eat it with a spoon (it’s actually that good 😁) 1️⃣ cook your pumpkin (I used butternut and removed the skin. You could also use Hokkaido w the skin) in water w star anise, cardamom and cloves (for a small pumpkin you need around 1 star anise, 3 cardamoms and 4 cloves) You need those spices in there, that’s what makes it taste so good! 2️⃣ when pumpkin is soft, remove the spices 3️⃣ Blend the pumpkin w a little bit of vanilla oat/soy milk and cinnamon 4️⃣ that’s it! INGREDIENTS
for the omelette
50 g chickpea-flour
100 g whiteflour
300 g soy-milk
1/2 tsp baking powder
1/2 tsp salt
—
for the filling
200 g mushrooms (sliced)
1.5 dl balsamic-vinegar
1 garlic clove (minced)
1 tbsp maple syrup
salt
100 g valerian salad

METHOD
1. Heat a saucepan, add in little oil and sauté the mushrooms for 5 minutes.
2. Place vinegar, maple syrup and garlic in a bowl, whisk and pour over the mushrooms. Simmer for 3-4 minutes then place aside.
3. For the omelettes. place all the ingredients in a bowl and whisk until lumps free.
4. Heat a saucepan over medium heat, add in 1 tsp of oil, pour in 2 dl of chickpea-mixture and move the pan around to spread it out evenly.
5. cook for 3-4 minutes then flip the omelette carefully and cook for another minute.
6. Fill the omelettes and serve hot.
7. Enjoy!

~ 1 pack of firm tofu, drained well⁣⁣⁣⁣⁣⁣
~ 1/4 cup chopped celery⁣⁣
~ 1/4 cup chopped broccoli stem/jicama/water chestnut⁣⁣
~ 1 small carrot, chopped⁣⁣⁣⁣⁣⁣
~ 2.5 tablespoons starch⁣⁣
~ 2 teaspoons salt⁣⁣⁣⁣⁣⁣
~ a pinch of white pepper⁣⁣⁣⁣⁣⁣
~ oil⁣⁣
~ your favorite grain & blanched broccoli⁣⁣
⁣⁣
Teriyaki sauce
~ 1 teaspoon minced garlic⁣⁣
~ 1 teaspoon minced ginger⁣⁣
~ 2 tablespoons soy sauce⁣⁣
~ 2 tablespoons mirin
~ 1.5 tablespoons organic brown sugar/maple syrup⁣⁣
~ 1/4 cup hot water⁣⁣
(adjust sweetness/saltiness to your preference)⁣⁣
⁣⁣
✔️⁣⁣⁣⁣Mash tofu in a bowl, if it's too wet, use a paper towel to absorb moisture. Add in chopped veggies, starch, salt & white pepper to tofu & mix until well combined. Take about 1 tablespoon of the mixture & mold it into a small ball. ⁣⁣
⁣⁣⁣⁣⁣⁣
✔️In a heated non-stick pan, drizzle a thin layer of oil covering the pan & pan-fry tofu balls until golden brown. Drain excess oil on a paper towel, set aside.⁣⁣
⁣⁣
✔️To make the teriyaki sauce, heat 1 teaspoon oil in a pan, sauté ginger & garlic until fragrant. Add in all liquid, syrup/sugar & cook until sauce starts to thicken (you can store this in a jar for later use too). Turn off the heat, toss tofu balls with the sauce. Serve warm with blanched broccoli & rice for a delicious meal.⁣⁣

NOURISH BOWL
I'm trying to fuel myself through this part of the year, with the dark and cold season ahead of us, with lots of nourishing, delicious food. I love my salads even in the winter, but I try to add a few warm ingredients to keep the body temperature up and to feel more full.

Chickpea-Omelette filled w/Maple Balsamic Garlic Mushrooms & Valerian Salad by @vegaliciously Follow us @vegspirationfeed for daily vegan recipes INGREDIENTS for the omelette 50 g chickpea-flour 100 g whiteflour 300 g soy-milk 1/2 tsp baking powder 1/2 tsp salt — for the filling 200 g mushrooms (sliced) 1.5 dl balsamic-vinegar 1 garlic clove (minced) 1 tbsp maple syrup salt 100 g valerian salad METHOD 1. Heat a saucepan, add in little oil and sauté the mushrooms for 5 minutes. 2. Place vinegar, maple syrup and garlic in a bowl, whisk and pour over the mushrooms. Simmer for 3-4 minutes then place aside. 3. For the omelettes. place all the ingredients in a bowl and whisk until lumps free. 4. Heat a saucepan over medium heat, add in 1 tsp of oil, pour in 2 dl of chickpea-mixture and move the pan around to spread it out evenly. 5. cook for 3-4 minutes then flip the omelette carefully and cook for another minute. 6. Fill the omelettes and serve hot. 7. She made us vegan shepherds pie, I made the stuffing, and my mom made the potatoes and veggies. Everything was so so good! And so happy it was done in less time and with less stress this year since everyone pitched in!🍂🍁

Recipe (yields 20-25 🥟)⁣
🍃Filling ingredients
~ 1 lb bok choy, 1 small🥕 - chopped⁣
~ 1 King oyster mushrooms, chopped (optional)⁣
~ 1 teaspoon grated ginger⁣
~ 1 tablespoon homemade stir fry sauce, salt & oil⁣
✔️In a heated pan with 2 teaspoons oil, sauté carrot & ginger until fragrant, then add in mushrooms, bok choy & sauce. Season accordingly. Drain out as much liquid as you can.⁣
⁣
🍃Dough ingredients⁣
~ 1 cup sweet potato starch⁣
~ 2/3 cups tapioca starch⁣
~ 1/3 cups rice flour plus more for dusting⁣
~ 1/2 teaspoon salt⁣
~ 1 cup of hot water⁣
✔️Mix flour, starches & salt in a heatproof bowl. Pour in hot water & quickly stir to combine. Once the mixture cools off & still warm, knead it into a soft dough. If the dough is too sticky, add more rice flour. Pinch out a 1inch ball & dust surface & rolling pin with rice flour. Flatten ball with your palm & roll it to a round disc. Hold wrapper on your left hand & using your right hand with a rolling pin, rotate wrapper while you roll to get a thicker center & thinner edge 👀🎥 Be gentle when rolling as gluten-free wrapper is very fragile.
✔️Place 1 tablespoon of filling in the middle of wrapper & pleat to seal.⁣
✔️To cook, add 2 teaspoons oil in a heated nonstick pan. Add dumplings, one at a time; spacing it out in one layer. Cook until the bottom is lightly browned, gluten-free wrapper takes more time to cook. Add about 1/2 cup hot water to pan & cover. Lower heat to medium & let simmer until all water has been absorbed. Serve warm with crispy garlic & chili oil.😍

Oats are one of my all time favorite breakfasts, especially after a workout 🍓

I always fill mine up with nut butter, nuts, fruit (often frozen because it’s cheaper and fresher!), dried fruit, seeds, cinnamon, and cocoa nibs.

It ends up being a really protein filled and satisfying meal.

I always microwave mine according to the package instructions, making sure not to let It overflow in the microwave, and load it up before taking a pretty picture.

I marinated my squash for at least 12 hours in tamari sauce, lime juice, garlic powder, chipotle powder, and paprika. The things you can add to your “wrap” are endless! ⚫️ Black bean soup ⚫️
• Soak black beans for 12 hours, then cook them in unsalted water for 1 hr. • dice 1-2 potatoes, cellery, onion,  garlic and chili
• bring to a boil with some coconut milk and bouillon and half of the black beans. • When potatoes soft, turn down heat and puree it.
• add the other half of the beans, salt, pepper, cilantro and cumin to taste.
• serve with coconut sour cream and avocado and MORE cilantro! @a_s_i_n_o  This one is just for you my dear! 😂

Recipe
*2 tbsp vegan butter
*2 cloves of garlic
*1 tsp thyme or oregano
*1 whole corn
*1 lemon (juice and zest)
*2 tbsp flour
*1 cup or soy milk
*1 tsp salt and pepper
*Handful of basil
*1-2 cups of water from tagliatelle
*250g tagliatelle

METHOD
•Cut the corn off the cob.
•Melt butter in the pan and add garlic, thyme and corn and stir fry for about 5mins.
•Add flour and mix well till it completely dissolves, then add soy milk, season it and stir until it thickens.
•Add basil, lemon juice and water from pasta (depending on how thick you want the sauce to be)
•Serve right away

For a while now we’ve been trying to eat plant based more and these chickpea burgers have become a staple around here. They are delicious and quick to make, even on a weeknight.  Do you do plant based meals at home?

To make these you need:
1 can chickpeas
1/2 onion diced
2tbls oats
2 cloves garlic minced
2tsp paprika powder
2tsp cumin powder
1tsp coriander powder
1 carrot grated
1/2 bell pepper chopped
2tbls tahini 
1/2 tsp salt (add or decrease ease according to your taste)

Drain and rinse you chickpeas. 
In a pan sauté  the onions, carrots and pepper. Keep aside. 
Add chickpeas to the blender with the spices, garlic, tahini and salt to taste. Pulse till blended with few chunks left. 
Add the sautéed onions, vegetables and oats mix together with a spoon. (You could add the veggies and onion raw but I prefer cooking it first)
Form mixture in to mini burgers. 
Heat a pan with a little oil and cook on both sides for approx 8 mins. .

Enjoy these in a wrap, on top of a salad or on its own with some sides (e.g avocado, sweet potato chips, corn on the cob). They also freeze well, so great to batch make. .

Potatoes are a carbohydrate rich whole food with important vitamins and minerals. There are different types of potatoes such as gold potatoes, russet potatoes, and more. These don’t differ much in nutritional value, only in taste and consistency. For example, gold potatoes are better to mash (richer taste) and russet potatoes make a great oven potato.⁠

The potato becomes unhealthy if you slather it with a large amount of oil and salt. Especially the oils used on store bought (or restaurant) french fries, which causes inflammation and increases the calories of the meal. So if you have time, cut up your potatoes and bake them in the oven. All you have to do is sprinkle them with your favorite seasoning. I don’t even use oil and they come out crisp and delicious (425 F for about 30 – until soft inside).⁠

To make the mashed potatoes creamy I don’t use any butter or oils either. I simply use unsweetened original soy milk and season with salt and onion powder. You can also add some nutmeg to it. For a whole meal I top the potatoes with a #vegangravy recipe and add half a plate of steamed broccoli (or peas) on the side.⁠

Recipe 2 almond tortillas heated up on medium high in a pan sprayed with avocado oil, (heat the spinach in the same pan while the tortillas are cooking). Mash some black beans onto one side of the tortilla and add a sprinkle of cumin, then top the beans with vegan Gouda (or any plant cheese or your choice). Once the cheese starts melting add some of the wilted spinach and some mashed avocado and fold over. Cook for another 30

🌿GUISO DE VERDURAS AL PESTO🌿 --> GUARDATE EL POST QUE LLEVA DOBLE RECETA 😜<--
La salsa pesto es una de mis favoritas. Para mi Batch Cooking de esta semana he preparado uno que lleva: 1 taza de pipas de calabaza, 2 tazas de AOVE, 4 cucharadas de levadura nutricional de @solnatural, 1 diente de ajo, 1 puñado generoso de albahaca y 1 puñado de kale para hacerlo aún más nutritivo. Lo trituro todo un poco pero dejo que tenga buena consistencia y que se noten las semillas. Después lo conservo en la nevera y aguanta perfectamente toda la semana 💚
Y este guiso es uno de los platos que he preparado y enriquecido utilizando este pesto. 💚Para prepararlo solo necesitas:
2 tazas de tomate triturado
1 cebolla
1 tomate
250 g. de shiitake
5-6 espárragos trigueros
4 cucharadas de salsa pesto
levadura nutricional para darle un toque cheesy al final
💚Para prepararlo comenzamos pochando la cebolla, cortada en juliana, en una sartén con un chorrito de AOVE. Pasados 10 minutos añadimos el resto de verduras troceadas en daditos y cocinamos a fuego medio-alto 15 minutos más. Añadimos el tomate triturado y la salsa pesto y mezclamos todo muy bien. Cocinamos a fuego medio-bajo otros 15 minutos y listo. Nosotros lo hemos disfrutado con arroz integral cocido. Queda un sabor de pesto más suave pero con toda la potencia del tomate. Si salsa de tomate y salsa pesto te gustan te aseguro que este combo te va a fascinar. .

🛒 Ingredients:
3 pounds ripe plum tomatoes, cut in half lengthwise
1/4 cup extra virgin olive oil + 2 tablespoons
2 teaspoons salt
1 teaspoon black pepper
1 large onion, chopped
6 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1 (28-ounce) canned plum tomatoes, with their juice
1 ½ cups fresh basil leaves, packed
1 sprig rosemary
1 quart vegetable broth
INSTRUCTIONS
1. Preheat the oven to 425°F. Toss together the tomatoes, 1/4 cup olive oil, salt, and pepper. Spread the tomatoes in 1 layer on a baking sheet and roast for 35-40 minutes.
2. Heat 2 tablespoons of olive oil in a large stockpot over medium heat. Add onions and red pepper flakes, and cook, stirring occasionally until the onions are translucent, about 10 minutes. Add the garlic and saute for 1 more minute. Add the canned tomatoes, basil, rosemary and vegetable broth. 
3. Transfer the oven-roasted tomatoes (and their liquid) into the stockpot. Bring the mixture to a boil and simmer uncovered for 40 minutes. Use an immersion blender or regular blender to blend the soup to a smooth consistency.

Here’s a fruity healthy one for you: berry chia pudding🍓🍓
For a small 150 ml 1 jar you need:
🔸2-3 tbsps chia
🔸plant based milk🌿 (I alternate between oat, almond and soja milk)
🔸1 tbsp honey
🔸all sort of berries (I used raspberries, strawberries and frozen blueberries)
🔸1 tbsp pink Pitaya dragon fruit organic powder (optional)

Pour the milk over the chia seeds, add the pink pitaya and let it soak overnight. In the morning your chia should be creamy and thick. Add the fruits and enjoy.

Recipe 👇⠀
Ingredients ~⠀
1 ripe banana⠀⠀
about 125ml (plantbased) milk⠀⠀
40gr almond flour⠀⠀
60gr spelt flour⠀⠀
1 tsp baking powder⠀⠀
a pinch of vanilla and cinnamon⠀⠀
Oil for frying⠀⠀
Toppings ~⠀
raspberries⠀⠀
almond cream (or another spread of choice)⠀⠀
pomegranate⠀⠀
blackberries⠀⠀
granola⠀⠀
Directions ~⠀
Mash the banana with a fork and blend with the plant milk.⠀⠀
Mix spelled flour, almond flour, baking powder, vanilla and cinnamon separately first and then add to the milk mixture.⠀⠀
Stir everything until the dough is creamy and smooth.⠀⠀
Heat up oil in a large pan on a medium heat.⠀⠀
Now add about 1-2 tbsp of dough per pancake to the pan and bake for about 2-3 minutes.⠀⠀
As soon as bubbles come to the surface, flip the pancakes and bake for about more 2-3 minutes.⠀⠀
Then spread the pancakes with almond cream and hot pureed raspberries and make a stack.⠀⠀
Serve the “pancake tower” with fresh raspberries, pomegranate, blackberries and granola or other toppings of your choice ⠀

Recipe: ROASTED POTATOES⠀
1½ lb yellow or red baby potatoes⠀
olive oil (just enough to coat)⠀
large pinch of ground black pepper⠀
¼ tsp salt⠀
½ tsp dried oregano⠀
½ tsp lemon juice⠀
1 tsp dried thyme⠀
2 cloves garlic, minced⠀
⠀
Instructions⠀
Preheat oven to 425°F.⠀
Wash potatoes and cut into halves.⠀
Place in a bowl, toss with salt, thyme, garlic, lemon juice, oregano and pepper.⠀
Bake for 25 minutes on a baking sheet lined with parchment paper.⠀
Remove from oven, rearrange potatoes and bake for another 5-10 minutes, until they're golden brown and crisp.⠀
⠀
Roasted Mushrooms⠀
2 pounds (900g) button or cremini mushrooms, washed, trimmed, and quartered⠀
1/4 cup (60ml) extra-virgin olive oil⠀
Kosher salt and freshly ground black pepper⠀
8 to 12 sprigs thyme or rosemary⠀
2 tablespoons chopped parsley, chives, tarragon, or other fresh herbs⠀
⠀
Directions⠀
1.Adjust oven rack to center position and preheat oven to 375°F. Toss mushrooms with olive oil and season with salt and pepper. Transfer to a foil-lined rimmed baking sheet and spread into an even layer. Spread thyme or rosemary sprigs on top of mushrooms. Transfer to oven and roast until mushrooms release liquid, about 15 minutes.⠀
2.Return mushrooms to oven and continue roasting until browned but still tender, about 30 minutes longer. Discard thyme or rosemary. Transfer to a bowl and toss with parsley, chives, or tarragon. Serve immediately

I usually stick to the vanilla or plain in these but it's always fun to use the variety of @siggisdairy flavors based off what kind you're making. ⁣200g flour⁣
⁣3 tbsp pumpkin puree⁣
⁣1 tsp baking powder⁣
⁣4 tbsp coconut jogurt⁣
⁣100ml princess and the pea @der_erbsendrink plant milk⁣ 🌱
⁣optional sweetener and some soda water⁣
⁣spices: cinnamon, ginger, nutmeg and cloves⁣
⁣topping:⁣
⁣yogurt and selfmade blueberry jam⁣
⁣frozen berries⁣
⁣Mix all dry ingredients in a bowl and all wet.( not the soda water ) Then mix the dry in the wet ones and stir well combined. Let it sit for about 10 minutes and now add the soda. Start to bake the pancakes and enjoy them!! Happy sunday funday!!⁣
